Shadiyon wala Chicken Steamed Roast

Ingredients
  

  • 5 lbs Chicken leg quarters 6-8 pcs

Marination masala:

  • 1 tbsp besan
  • 1 tsp garlic powder
  • 1 tbsp crushed red chili
  • 2 tbsp red chili powder
  • 1 tbsp salt or to taste
  • 1 tbsp coriander powder
  • 1 tsp cumin crushed
  • 1 tsp black pepper
  • 1 tsp garam masala powder
  • 1/2 tsp ajwain
  • 2 tbsp lemon juice
  • 2 tbsp chili sauce
  • 2 tbsp soya sauce
  • 1 tbsp vinegar

For brine:

  • 4-6 cups water
  • 1/2 cup vinegar
  • salt

For steam:

  • 1 bay leaf
  • 1 cinnamon stick
  • cumin seeds
  • salt

Instructions
 

  • Mix vinegar with water, and add salt to taste.
  • Make cuts on the chicken and soak it in the brine for an hour.
  • Next mix the masala ingredients and rub them on the chicken.
  • Marinate for at least 3-4 hours (overnight is best).
  • Shallow fry the chicken for 5 minutes on each side.

To steam:

  • Fill a large pot with water, bay leaf, cinnamon stick, cumin seeds, and salt. 
  • Place a strainer over the water, line it with butter paper (with holes), and place the fried chicken on top. 
  • Cover with foil and lid. 
  • Steam on high for 5 minutes, then on medium-low for 50 minutes. Serve and enjoy!
