Marination masala:

garam masala powder

chili sauce

soya sauce

vinegar
For brine:
4-6
cups
water
1/2
cup
vinegar
salt
For steam:
1
bay leaf
1
cinnamon stick
cumin seeds
salt
Instructions
Mix vinegar with water, and add salt to taste.
Make cuts on the chicken and soak it in the brine for an hour.
Next mix the masala ingredients and rub them on the chicken.
Marinate for at least 3-4 hours (overnight is best).
Shallow fry the chicken for 5 minutes on each side.
To steam:
Fill a large pot with water, bay leaf, cinnamon stick, cumin seeds, and salt.
Place a strainer over the water, line it with butter paper (with holes), and place the fried chicken on top.
Cover with foil and lid.
Steam on high for 5 minutes, then on medium-low for 50 minutes. Serve and enjoy!
