Gobhi Gosht Recipe (Mutton with Cauliflower)

Gobhi Gosht is a popular dish in Pakistan and India that combines cauliflower (gobhi) and meat (gosht), typically lamb or mutton. It is a flavorful and aromatic curry that is enjoyed with rice or roti.

Gobi Gosht Recipe (Mutton with Cauliflower)

Ingredients
  

  • 1.5 lbs meat (I used mutton fr this recipe)
  • 1 Onion sliced
  • 2 Tomatoes chopped
  • Salt to taste
  • 1 tsp Red chili powder or to taste
  • 1/2 tsp Turmeric powder
  • 1 tsp Cumin powder
  • 2 tbsp Garlic paste
  • 1 tbsp Ginger paste
  • 1 tsp Green chili paste or to taste
  • 2 cups Water or as required
  • 1 cup Oil
  • Cauliflower
  • 1 tsp Carom seeds
  • 1 tsp Cumin seeds
  • 2 tbsp Fenugreek leaves
  • 4 tbsp Ginger julienne
  • Green chilies
  • coriander a handful

Instructions
 

  • In a pot or heavy skillet, combine meat, sliced onions, chopped tomatoes, ginger garlic, green chili paste, salt, red chili powder, turmeric, cumin powder and water.
  • Cover and cook until the meat is tender.
  • Once the meat is tender, add oil and cook on high heat for 8-10 mins.
  • When oil separates, add the cauliflower and stir until the cauliflower has absorbed the masala.
  • At this point add water if necessary, cauliflower (gobhi) will cook in its own moisture and juices realeasd. (I used 1 tbsp because my masala was getting too dry)
  • Add green chilies, julienne ginger and chopped coriander. Mix gently, cover and cook for 5-6 mins on medium-low heat until cauliflower is cooked.
  • Remove the lid carefully, sprinkle Garam Masala powder.
  • Tasty gobhi gosht is ready. Enjoy with garam garam roti, paratha or rice.

Notes

Generally there’s NO need to add water while cooking cauliflower for Gobhi Gosht. The cauliflower will release some moisture during the cooking process, and it will cook in its own juices along with the spices and meat. If you’re following the recipe mentioned earlier, you add the cauliflower florets to the dish after the meat is cooked, and they will cook in the remaining moisture and flavors of the curry. However, if you find that the dish is drying out or the cauliflower is not cooking properly, you can add a small amount of water, to create some steam and help in the cooking process. Just be cautious not to add too much water, as the dish should have a thick and flavorful gravy.
