Kulcha – Till wala Kulcha
Kulcha is a type of popular bread in Pakistan. Made of all-purpose flour and mixed together by hand or hand mixer with some ingredients.
Ingredients
Dough:
- 5 cups All-purpose flour
- 1 tsp Sugar
- 1/2 tbsp Salt
- 1 tbsp Instant yeast
- 1/2 tbsp Baking powder
- 1 cup Milk Lukewarm
- 1-2 cups Water Lukewarm
- 2 tbsp Yogurt
- 1/4 cup Oil
Kulcha toppings:
- Black sesame seeds optional
- White sesame seeds
- 2 tbsp Yogurt
- 1 tbsp Melted butter
Instructions
- In the bowl of stand mixer, add all-purpose flour, salt, sugar, baking powder and instant yeast. Whisk all the dry ingredients together.
- Attach the dough hook and start the stand mixer on low speed.
- Next add yogurt, milk, oil and add one cup of water.
- Keep the speed at low/stir and after one min add oil.
- Knead the dough for 6-8 minutes.
- The dough is ready when it looks smooth and does not stick to the sides of the bowl.
- Lightly oil a large bowl and transfer the dough into it.
- Rub very little oil. Cover and let it rise in a warm place until it doubles in the volume. This could take about an hour.
- When the dough is fully risen, divide it into 8-10 parts and make balls. Rub some oil and let it rest for about 10 mins.
- Meanwhile set the oven to BROIL on high.
- Take one dough ball, and roll it gently using soft hands. Stretch the dough outwards using finger tips.
- You can use a rolling pin to stretch out the dough.
- Transfer the stretched dough onto a preheated pan (on the stove).
- Keep the flame medium and brush the yogurt and melted butter mixture on the kulcha.
- Using a dowel or skinny wooden spoon make holes and sprinkle sesame seeds on the kulcha.
- Once the bottom of the kulcha (bread/naan) changes color to light golden, transfer it to a preheated oven and place the kulcha on the top grill.
- It will take about 1-2 mins for the kulcha to be fully cooked.
