Lahori Qatlama
A Traditional Festival Bread
What is Qatlama?
Qatlama or Katlama is a large-orange colored deep fried roti/poori topped with the layer of gram flour (besan) mixed with spices along with lentils, coriander seeds and pomegranate seeds.

Ingredients
Dough
- 2 cups All-purpose flour
- 1 tbsp Oil/ghee
- 1 tbsp Salt
- Water
Gram flour (besan) mixture
- 1 cup Gram flour (besan)
- 1 Egg
- 1 tbsp Salt to taste
- 1 tbsp Cumin seeds
- 2 tsp Red chili powder
- 1/2 tsp Carom seeds (ajwain)
- 1/2 tsp Food color
Toppings
- 2-3 tbsp Urad daal (Maash ki daal)
- Pomegranate seeds
- Coriander seeds
- Oil for deep frying
Instructions
- Soak the daal in water for at least 1 hour.
- Mix flour and salt in a bowl.
- Add oil, mix well.
- Use water as required to knead the dough.
- In another bowl mix gram flour, salt, red chili powder, cumin seeds, carom seeds.
- Add egg and mix well.
- Next add water and make a thick paste.
- Divide the dough in two parts.
- Take one part and roll it like a roti.
- Apply the gram flour (besan) mixture. Top it with some daal, pomegranate seeds and coriander seeds.
- Press gently using a spatula.
- Deep fry in hot oil. Fry both sides.
- Serve it hot. And enjoy 🙂
