Mutton Paya
A famous Pakistani dish, delicious curry (salan) made with goat trotters (mutton paya). It is best to cook them slowly overnight at a very LOW flame, but I am using an instant pot (you can make in a pressure cooker too). This is one of the most finger-licking and satisfying dishes. Try it and you’ll love it.
Ingredients:
For Stock:
– Cinnamon stick (daar chini) 1
– Black cardamom (kaali ilaichi) 3-4
– Green cardamom (sabz ilaichi) 4-5
– Black pepper (kaali mirch) 5-6
– Cloves (long) 4-5
– Coriander seeds (sabat dhaniya) 3 Tbsp
– Cumin seeds (zeera) 1 Tbsp
– Fennel (saunf) 1 Tbsp
– Onion 1
– Garlic 3 whole
– Ginger 2-3 inch
– Water 2 liter
– Salt to taste
Masala:
– Salt to taste
– Turmeric (haldi) ¼ Tsp
– Red chili powder (laal mirch) 1 Tsp or to taste
– Paprika ½ Tsp
-Coriander powder (dhaniya powder) 1 Tsp
– Onion ¼ – Garlic 2-3
– Ginger 1 inch
– Tomato ½ (this is optional)
– Yogurt 2 Tbsp
– Garam masala powder (optional) I didn’t use it
