Chicken Almond
Try this tender chicken, vegetables, and fried almonds, bathed in a sauce, tastes just like a Chinese restaurant favorite. There are few variations you can make to the recipe. I have seen many recipes for almond chicken, and the vegetables vary. The vegetables I used are completely optional. These are the veggies of my choice, but you can add any kind of vegetables, like carrots, celery, peas etc.
Ingredients:
Chicken Marination:
– Chicken cut into cubes
– Egg white 1
– Corn Flour 1 Tbsp
– Salt 1 Tbsp
– Black pepper 1 Tsp
– White pepper ¼ Tsp
– Soy Sauce 1 Tbsp
– White vinegar 1 Tbsp
Veggies: (Use veggies of your choice)
– Onion 1
– Green bell pepper ½
– Red bell pepper ½\
– Orange bell pepper ½
– Mushrooms ½ cup
– Garlic 1 Tsp
Sauce Mixture:
– Chicken Stock 1.5 – 2 cups
– Chicken cube (optional)
– White vinegar 1 Tbsp
– Soy sauce 1 Tbsp
– Corn flour 2 Tbsp
– Almonds (blanched) ½ cup
– Oil ½ cup – Sugar 1 Tsp

Instructions:
Step 1: Marinate the Chicken
- In a bowl, mix the chicken cubes with egg white, corn flour, salt, black pepper, white pepper, soy sauce, and white vinegar.
- Let the chicken marinate for at least 20-30 minutes.
Step 2: Prepare the Sauce Mixture
- In a separate bowl, combine chicken stock, soy sauce, white vinegar, and sugar.
- Dissolve the corn flour in a small amount of water, then mix it into the sauce mixture to thicken.
- Add a chicken cube (optional) for extra flavor. Set aside.
Step 3: Cook the Chicken
- Heat 2-3 tablespoons of oil in a pan or wok.
- Add the marinated chicken and stir-fry until it turns golden and is cooked through. Remove and set aside.
Step 4: Sauté the Veggies
- In the same pan, heat a little more oil.
- Add chopped garlic and sauté until fragrant.
- Add onion, green bell pepper, red bell pepper, orange bell pepper, and mushrooms. Stir-fry for 2-3 minutes (vegetables should remain crunchy).

- Return the cooked chicken to the pan with the vegetables.
- Pour the prepared sauce mixture into the pan and stir well. Cook until the sauce thickens.
Step 6: Add Almonds
- Add blanched almonds to the chicken and vegetables. Mix thoroughly and let simmer for 1-2 minutes.
