Pure Nostalgia in Every Bite – Pakistani Style Club Sandwich 🥪 
Make it for your next Iftar 🌙 

Chicken Filling
* 200 g boiled chicken, shredded
* 1 cup mayonnaise
* Salt to taste
* 1 tsp sugar
* 1 tsp black pepper
* Butter
* Bread slices 

In a bowl, combine the shredded chicken, mayonnaise, salt, sugar, and black pepper. Mix well until creamy and evenly combined. Spread butter on the bread slices and use the chicken mixture as the filling.

Eggs
* 2 boiled eggs, sliced (You can also use fried eggs instead if you prefer.)

Sauce
* 1/4 cup mayonnaise
* 1 tbsp ketchup
* 1/2 tbsp chili sauce 
* 1/2 tsp garlic powder
Mix everything together and set aside.

Vegetables & Cheese
* Thinly sliced cucumber
* Thinly sliced tomato
* Mozzarella cheese
* Cheddar cheese

To Assemble
* Toast both sides of the bread slices (use butter if desired)
1. Spread the prepared sauce on a slice of bread.
2. Spread the chicken filling, add second piece of toasted bread, top it with  cheese, sliced boiled eggs, cucumber, and tomato.
3. Top with the third slice of bread.
4. Trim the edges and cut into triangles.

Serve with fries, ketchup, or coleslaw. Enjoy ❤️

Crispy Fried Fish Fingers 🐟

Ingredients:
800 grams Fish (boneless)
3 tbsp Vinegar
Salt to taste
1 tsp Red rushed pepper
1 tsp Red chilli powder or to taste
1 tsp Black pepper powder
1 tbsp Lemon juice
1 tbsp Vinegar
3 tbsp All-purpose flour
2 tbsp Corn flour
1 Egg
Breadcrumbs as required
Oil for frying

INSTRUCTIONS:
Cut the fish into strips.
In a bowl add fish, water, vinegar and salt. Leave it for 10 mins. Then drain the water and pat dry the fish completely using paper towel.
Transfer the fish fingers into another bowl and add all the spices.
Marinate the fish for at least 1-2 hours in a refrigerator.
Coat the fish fingers with bread crumbs.
Deep fry: Heat oil in a pan, and fry the fish on medium heat for 3-4 mins or until golden.
Baking: Transfer to baking tray. Spray with oil, bake 13 minutes or until crispy on the outside.
Herbs & Spices
Sprinkle chaat masala and lemon juice and enjoy.

Sauces & Seasoning:
- 1–2 tbsp soy sauce
- 1 tbsp hoisin sauce
- 1 tbsp oyster sauce
- Salt to taste
- ½ tsp black pepper
- ½ tsp white pepper
- Spring roll wrappers
- Oil for frying

Method
1️⃣ Prepare the Filling
1. Heat 2 tbsp oil in a pan on medium heat.
2. Add chopped garlic and sauté until fragrant (do not brown).
3. Add carrots and bell peppers first. Stir fry for 1–2 minutes.
4. Add cabbage and bean sprouts. Cook on high heat for 2–3 minutes — vegetables should stay slightly crunchy.
5. Add shredded chicken and mix well.
6. Add soy sauce, hoisin sauce, oyster sauce, salt, black pepper, and white pepper.
7. Cook for another 1–2 minutes.
8. Turn off heat and mix in green onions.
9. Let filling cool completely before rolling.

2️⃣ Rolling the Spring Rolls
1. Place wrapper in a diamond shape.
2. Add 2–3 tbsp filling near the bottom corner.
3. Fold bottom over filling, fold sides inward, and roll tightly.
4. Seal the edge with a little flour-water paste.

3️⃣ Frying
- Heat oil on medium.
- Fry until golden brown and crispy.
- Do not overcrowd the pan.
- Fry on medium heat for extra crunch.
Drain on paper towel.

Air Fryer Option
- Brush lightly with oil.
- Air fry at 375°F for 10–12 minutes, flipping halfway.

Freezing Tips
- Arrange uncooked spring rolls in a single layer.
- Freeze until firm, then transfer to ziplock bag.
- Fry directly from frozen — no need to thaw.

This recipe would give you around 40-50 sandwiches 

Ingredients: 
- Eggs 12
- Bread @oroweatbread 
- Mayo 5 tbsp @mccormickspice 
- Butter 2 tbsp @icantbelieveitsnotbutter 
- Salt to taste 
- Sugar 1 tbsp
- Black pepper 2 tsp 
- Green onions as required 
Note: you can adjust the spices according to your liking.

Method: 
I used air fryer method for the eggs. You can also boil them :) 
Place eggs in a preheated air fryer. Set to 280F for 15 mins.
Next move the eggs in an ice cold water, and leave it for 2-3 mins then peel and mash. Add all the ingredients mix well. 
Spread the prepared mixture on the bread slice, cover with second piece of bread. Cut and enjoy ❤️
