Punjabi Yakhni Pulao
Yakhni Ingredients:
– Salt 1 Tbsp or to taste
– Cumin seeds (zeera) 2 Tbsp
– Fennel seeds (saunf) 2 Tbsp
– Ginger 3 inch
– Garlic 1 whole
– Bay leaf (tez paat) 1-2
– Green cardamom (choti ilaichi) 8 (half in yakhni and half in the rice)
– Black cardamom (barri ilaichi) 4 (half in yakhni & half in the rice)
– Black pepper (kali mirch) 14-15 (half in yakhni & half in the rice)
– Cloves (long) 10 (half in yakhni & half in the rice)
– Star anise Flower (baadiyan ka phool) 1
– Cinnamon sticks (darchicni) 2 sticks (1 in yakhni & 1 in rice, in the recipe I’m using both in yakhni)
– Coriander seeds 6 hand full (mutthi)
For Rice:
– Rice 2.5 Cups
– Oil ¼ Cup Mutton stock (yakhni) 4 full Cups
– Sliced onion ½ Medium
– Cumin seeds (zeera) 1 Tbsp
– Salt to taste
