What type of chicken works best for Chicken Ginger?
I prefer boneless chicken, but you can use bone-in chicken if you prefer. Thigh meat tends to stay juicier, while breast meat can dry out, although this can be managed.

Chicken Ginger
Ingredients
- 2 lbs Boneless chicken
- 1/2 cup Oil
- 1/2 Onion chopped
- 1 Tomato
- 2 tbsp Yogurt room temperature
- 1 tbsp Ginger garlic chopped
- Salt to taste
- 2 tsp Black pepper
- 2 tbsp Lemon juice
- 5-6 inches Ginger julienne cut
- 1 tsp Red chili powder or to taste
Garnishing
- Ginger
- Green chilies
- Butter/ghee optional
Instructions
- In a bowl, combine finely chopped ginger and garlic, black pepper, lemon juice, and salt. Set aside.
- Heat oil in a pan over medium-high heat.
- Add the marinated chicken and cook until it changes color, stirring occasionally.
- Once the chicken has changed color, add chopped onions, ginger, tomato puree, yogurt, and red chili powder to the pan.
- Mix everything together until well combined.
- Cover the pan and let the chicken cook until it's fully done, stirring occasionally to prevent sticking.
- Serve hot with your choice of roti, paratha, or plain rice.
