In a bowl, mix ginger garlic paste, mustard, salt, food color, and vinegar.
Add the chicken pieces and coat them well.
Cover and keep in the fridge for 30 minutes.
Step 2: Add Spices (Second Marinade)
Mix coriander powder, cumin, chaat masala, crushed red pepper, chili powder, garam masala, and salt.
Add this spice mixture to the chicken and coat well.
Cover and refrigerate for at least 3-4 hours or overnight.
Step 3: Cook the Chicken
Heat a pan over medium heat and place the chicken pieces in the pan and cook each side for 4-5 minutes. Don't overcook the chicken to keep it soft and juicy.
Step 4: Add BBQ Flavor (Optional)
Heat a piece of coal, and place it in a small foil cup inside the pan with the chicken.
Drizzle a few drops of oil on the coal and cover with a lid for 5 minutes.
Step 5: Grill the Chicken (Optional)
Thread the chicken pieces onto skewers.
Grill on the stove or BBQ, turning the skewers until slightly crispy.
