Start by placing the whole wheat flour in the bowl of your mixer.
Use the dough hook attachment.
Add oil, salt (optional) and turn the mixer on low speed (stir or 1) to begin mixing the flour.
Slowly pour in the water, starting with 1 cup and adding more as needed until the dough comes together and is no longer dry and crumbly.
Increase the speed of the mixer to medium (no. 4) and let it knead the dough for about 5-7 minutes, or until the dough becomes smooth and elastic.
In the end, move the speed to no. 6 for a min and at this point the dough should no longer stick to the sides of the bowl.
Once the dough is kneaded, remove it from the mixer and transfer it into an airtight container.
Let it rest for at least 10-15 minutes before rolling it out.
