Shakshuka
Made with eggs poached in tomato sauce and spices. It is a complete nourishing, delicious meal.

- 6 Eggs
- 2-3 Tbsp Olive oil
- 1 Medium Onion chopped
- 2 Tomatoes chopped
- 2 Garlic cloves minced
- 3-4 Tbsp Tomato sauce
- 2 Tbsp Tomato paste
- Green chili as required
- 1 Tsp Cumin powder
- 1/2 Tsp Red chili powder or to taste
- 1 Tsp Paprika
- 1/2 Tsp Red chili flakes
- 1/4 Tsp Turmeric
- 1 Tsp Sugar
- Salt to taste
- BLACK PEPPER as required
Heat olive oil in a frying pan over medium heat.
Add onion and cook for about 5 minutes until the onion begins to soften.
Add chopped tomatoes. You can use bell peppers too (optional) and cook 3-4 mins.
Stir in garlic and continue to cook for 5-7 minutes over medium heat until softened.
Add tomato sauce and tomato paste, and add all the spices. Adjust the spices according to your taste.
Add chopped green chilies (as required).
Make wells in the tomato sauce and crack in eggs, one at a time. I am using 6 eggs for this recipe.
Cover and cook for 5-7 mins or until eggs are cooked. For rummy yolk cook 3-4 mins. For hard yolk 5-8 mins are good.
Garnish with green onions, cilantro and green chilies (as required) and serve with bread of your choice. Enjoy!
